01 / ABOUT THE PLACE

About this place

Just a short walk from Morishita Station, Ramen Kan draws many diners for its hearty combination of ramen and its signature jun reba don. The flagship Kan Ramen lets guests customize the profile of their soup base, offering a blended tonkotsu-seafood broth, a rich kotteri version enriched with pork back fat, or an assari light broth. The milky tonkotsu base combines gentle sweetness with the savory depth of dried seafood, yielding a rich broth that never feels overly heavy and clings nicely to medium-thick, pleasantly chewy straight noodles.

Equally prominent alongside the noodles is jun reba don, a rice bowl crowned with liver stir-fried in an intense sweet-and-savory sauce and blanketed with chopped scallions. The bold sauce soaks into the steamed white rice, pairing effortlessly with the richness of the tonkotsu broth. Ordering the Kan Set pairs the house ramen with a small jun reba don, allowing guests to sample both signatures together.

For a different grain option, the Kan Cha Set adds a half-portion of fried rice, wok-tossed over high heat until fragrant and fluffy. Tabletop condiments, including spicy pickled mustard greens (karashi takana), let diners adjust the seasonings toward the end of their meal to introduce a sharp, flavorful shift.

The menu also branches into Sapporo-style miso ramen, Sichuan-style mapo ramen, and dipping tsukemen with a choice of soup styles. Counter seating dominates the dining room, and orders are handled through a cash-only ticket machine. It is an easygoing stop for a midday lunch or a solo evening bowl accompanied by beer and side dishes.
